PROCESSING

With modern equipped vessels, which make short fishing trips and use various fishing methods, the crew ensures that excellent quality fish is landed. Immediately after being caught, the fish is processed on board. Gutted, sorted (both by fish species and size class), rinsed clean, cooled in ice to 0 degrees Celsius and then stored in the fish hold or immediately frozen to -18 degrees Celsius in the freezer hold stored on board. The cold chain is not interrupted. This is how Northseafood guarantees the best quality.

Filleting

The inspected fish is machine filleted and in line, if desired, the skin is removed and the fillet is delivered completely clean to specification.

At Northseafood we can manually and artisanally fillet fish species and/or grades that are less suitable for machine processing, our employees guarantee the fillet quality.

IQF Freezing

Conveniently removable per portion

After sorting and filleting, the fish is immediately chilled again and frozen by the piece at the belt freezers within minutes. With our belt freezers, we have frozen the product to the core in a very short time, thus preserving the taste and structure.

Block Freezing

For maximum compact loading

With our plate freezer, we can freeze fillets and whole (ink) fish, in blocks, in pack weights from 250g cubes for retail to 3 kg blocks for bulk consumers. Thanks to our method of packaging, the products are easy to defrost.

Glazing

The optimal protection

In line with the belt freezer, the fillets or whole fish are glazed with a protective ice coating as agreed with the customer. Thanks to the glazing layer, the product is optimally protected during storage.

Breading

Crispy and ready to use

The fillets are coated with breadcrumbs on one of our breadcrumb lines to specification, possibly flavored or unflavored in consultation with the customer. This product is now ideal for preparation in the frying pan or deep fryer.

Breading and Prefrying

Extra crispy and oven-suitable

Besides breadcrumbs, we can also bread the fillets and pre-fry them on our pre-frying line this is done with pure vegetable oil and if desired with special toasted breadcrumbs for an extra crispy product. Now the fillets are suitable for preparation in the oven, pan, fryer and on the grill.

Mugnaia; a la meunière

The classic artisanal recipe

NorthSeaFood has a line for so-called “mugnaia” production. this means that we coat the fillets with flour, with lemon, herbs and spices. If desired even with a layer of real butter. Preparation of this product is done as the fishermen and millers used to prepare the fish, in the pan, on the grill, or griddle.

Steam Delight is a unique production process of NorthSeaFood. Here we produce our fillets with different flavors of toppings, including based on butter, cheese or olive oil enriched with vegetables, herbs and spices.
